How do I write the page range?

Use commas for individual pages and hyphens for ranges — for example 2, 1-3, 5, or 1-3, 8-10. Pages come out in the order you list them.

Do the extracted pages keep their text and quality?

Yes. Pages are copied exactly, so text stays selectable and searchable and images keep their resolution. Nothing is re-compressed.
